What wines go well with vegan dishes?

CHATEAU SAINTE MARGUERITE symphonie foodpairing outside 16 9 scaled

Elegant combinations of plant-based cuisine and wine

Vegan cuisine asserts itself as a refined gastronomy, driven by the freshness of plant-based ingredients, the precision of seasonings and the diversity of textures. Roasted vegetables, aromatic herbs, citrus fruits, fragrant oils, dried fruits and umami notes make up creative plates, offering the ideal terrain for subtle pairings with wine.

Vegan-certified wines, with consistency

At Château Sainte Marguerite, our vintages are certified vegan because no animal products are used in their manufacture. During the fining stage, traditionally carried out with animal proteins, we use pea proteins. This technical choice preserves the aromatic purity of the wine while respecting an approach consistent with vegetal cuisine, without compromising the elegance, precision and style of our cuvées.

Vegan recipe ideas and pairing suggestions

Risotto with green asparagus, preserved lemon and almonds

Carnaroli rice, just-seared asparagus, preserved lemon brunoise, vegetable cream and slivers of toasted almonds. Ideal pairing: a round, lightly wooded white, such as the Fantastic White, The result is a creamy texture with depth and balance.

Watermelon, sesame and light soy sauce tataki

Watermelon marinated in a soy and ginger reduction, roasted sesame seeds, coriander shoots and a touch of yuzu. Ideal pairing: a well-structured, aromatic rosé with character, like our Fantastic rosé which adds umami and freshness to the dish.

Sweet potato gnocchi with lemon herb cream sauce

Melt-in-the-mouth gnocchi with a creamy sauce made with almond or cashew milk, chives, basil and lemon zest. Ideal pairing: an aromatic white wine such as our Symphony of white to prolong the sweetness and finesse of the dish.

Roasted Mediterranean vegetables, chickpea hummus and fleur de sel

Roasted eggplant, zucchini, tomatoes and peppers, served with a creamy hummus with cumin and lemon. Ideal pairing: a fruity, slightly spicy red wine like our Fantastic red.

A committed experiment

Pairing vegan recipes with certified vegan wines means choosing a gastronomy that is both responsible and elegant, where plants and terroir interact with naturalness and precision.
