![]() Concerned in producing high-class wines, Jean-Pierre and Guillaume FAYARD have a very meticulous control on the grapes harvested. The grapes are collected at full maturity, sorted and gently transported with the greatest care to the cellar. Here, rigour, tradition and modern techniques are articulated through a real passion for excellence. Arriving in the cellar, the grapes are immediately cooled by a powerful cooling system, which allows a perfect regulation of temperature throughout the harvest and fermentation. The white and rosé wines are obtained by direct pressing after a light pellicular maceration. The reds are fermented from 3 to 4 weeks. These vintages are then delicately aged in stainless steel tanks or barrels. |
